ingredients
175 gram rich salted butter (cold cu ed)
215 gram plain flour
40 gram rice flour
150 gram castor sugar/Icing sugar
method
heat oven to 162 c
in the food processor , add the plain flour, rice flour and salted butter, mix until breadcrumbs form then add the sugar, mix well.
lightly oil a tin or shortbread mold, pour the mix into the tin/mold, press down firmly in the tin making sure its evenly spread and firm to touch.
use knife to shape the dough lightly so that it will be easier to break when cold.
place in the oven and and cook for 15 to 20 mins
take out of oven and let cool on the rack before taking out of tin/mold
allow to cool completly before breaking off in segments and placing in tin to keep fresh.
