This best-ever anzac biscuits is very easy to make. Nutritious and delicious. Ingredients: 1. 1 cup rolled oats 2. 1 cup plain flour, sifted 3. 1 cup desiccated coconut 4. 1 cup brown sugar 5. 125g unsalted butter, chopped 6. 1 tbsp. golden syrup 7. 2 tbsp. boiling water 8. 1 tsp. bicarbonate of soda Method: 1. Preheat oven to 160C (320F). Lightly grease and line two baking trays with non-stick baking paper. 2. In a medium bowl, combine oats, flour, coconut and sugar. 3. In a small saucepan, combine butter and golden syrup. Stir over a low heat for 2-3 minutes until melted. 4. In a small jug, combine boiling water and soda. Stir into butter mixture. Pour into dry ingredients and mix well. 5. Roll heaped tablespoons of mixture into balls. Arrange on trays 4 cm space apart (to allow room to spreading). Flatten gently with fingertips or a fork. 6. Bake biscuits 15-20 minutes for chewy or 20-25 minutes for crispy. Cool on trays 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container. Makes 24 cookies.
