Assigning packages in Proteus is easy if you follow the steps in this short instructional tutorial. Some part some come in multiple packages (especially multiple SMT / SMD variants) but the library does not have the option. Be sure to take care that you assign the pins correctly however as this can cause a disaster. This will also allow you to create custom parts.
