There is a tool on the Wise Owl Knits website that can help you knit a sweater in a different yarn than the pattern calls for. If you are getting a different gauge in your swatch, but you love the fabric, you can plug numbers into this tool and figure out which set of numbers in the pattern that you should use to get the right sized finished garment. If your yarns are just a category different, this tool should work for you. It will not work to sub a bulky weight yarn in a fingering weight sweater, but if you are going from DK to fingering or sport to DK, give the automated Gauge Switch Tool a try!
