1. Make a roux by cooking butter, flour, and seasonings into a paste.
2. Make the cheese sauce by adding dairy to the paste.
3. Mix the pasta and sauce, then bake at 375F for about 45 minutes.
You'll need to keep a cup of the pasta water after boiling and draining. Also:
* 16 oz cavatappi (corkscrew) or elbows
* 4 tbsp flour + seasonings (salt, pepper, garlic, onion) to taste
* 4 tbsp butter
* 8 oz milk
* 8 oz cream cheese
* 16 oz sharp cheddar
* 8 oz white cheddar
