A classic South African tale. Biltong is like Jerky but better!! Much better. Chili Bites is basically biltong but cut up smaller and with chili added.
Spice Mix (for 10kg of meat so divide it up depending on your amount)
180g salt coarse or kosher
60g coriander seeds roasted
20g Fine black pepper
30g brown sugar
45g curry powder, paprika or spice of your choice (Optional)
For the marinade:
Equal amounts of Malt vinegar (white or similar works too) and Worcestershire sauce. Just make sure the meat is adequately covered but not swimming in the marinade.
