INGREDIENTS:
- Pandan flavouring
- 3 teaspoon gelatin
- Water
- ½ cups sugar
- ¼ cup small tapioca pearl
- ¼ cup Nata de coco
- Grated coconut
- 100ml evaporated milk
- 100 ml fresh milk
- 100 ml condense milk
METHOD:
1. Pandan Jelly: Place ½ cups of boiled water into a small bowl. Add the gelatin into the bowl and stir.
2. Add the pandan flavouring, sugar then mix till dissolved. Pour in the remaining 1 ½ cups of water.
3. Pour into container and chill till set. Cut into cubes.
4. Cook the small tapioca pearls, by boiling for 15 minutes or until they continuously float to the surface, then strain the water and rise under cold water.
5. Create the milk mixture by adding the evaporated milk, fresh milk and condense milk together in a jug and add pandan flavouring to liking.
SERVE:
1. Add the tapioca pearls, nata de coco, pandan jelly and coconut grates, pour over with milk mixture and ice.
