Buttermilk Biscuits
Biscuits are a family favorite on a Saturday morning or if we are having breakfast for dinner. They are great as is with a little butter and jelly, covered in sausage gravy, or turned into a biscuit sandwich. I’m sure you will love them too. 400 g. all purpose flour 22 g. Baking Powder 15 g. Sugar 6 g. Kosher Salt 113 g. (1stick) butter, very cold, plus 28 g. 1/4 stick for brushing 320 g. cold buttermilk Whisk flour, baking powder, sugar, and salt in a bowl. Place in fridge overnight or place in freezer for 30-60 minutes. Preheat oven to 425 Fahrenheit Line a baking sheet with parchment paper Grate a stick of butter and add to flour mixture. Quickly toss to incorporate. Add buttermilk and stir until just combined. Turn out onto floured surface. Flatten to 1” thick. Fold dough into thirds like a letter. Gently pat back to 1” and fold like letter folding the opposite direction. Repeat folding and flatten 2-3 more times. (4-5 folds total) Roll to 3/4” thick and use a 3 1/2" Biscuit or cookie cutter to cut biscuits. Brush tops with butter and bake until flaky tops are golden.
