Caramel Pecan Rolls
Here are the ingredients: 3 heaping teaspoons active dry yeast 1/2 cup warm water (105-115 degrees) filtered water is best 3/4 cup scalded whole milk, cooled to lukewarm 1/2 cup butter ( 1 stick) 1/2 cup sugar 2 teaspoons salt 1 egg at room temperature 4 cups bread flour Refrigerate for at least two hours and for as long as 3 days Roll out to approximately 13" x 19" and spread the top with 1/4 cup melted butter and 1/4 cup light brown sugar. Sprinkle with spices - cinnamon, ginger and mace or spices of your choice. Filling: 1 cup raisins that have been soaked in warm water and drained 1 cup pecan pieces In bottom of parchment covered sheet pan paint with 1/4 cup melted butter add 1/2 cup light brown sugar and 2 cups of pecan pieces. Roll up dough and seal edges, cut into 24 equal pieces. Allow rolls to rise until doubled in bulk, approximately one hour. Bake for 20-25 minutes in preheated oven 350 degrees.
