Carrot Cake

This Carrot Cake is so moist with delicious layers and a cream cheese frosting! This is great for Easter or anytime! Recipe: Cake Layers 2 ½ cups Self-Rising Flour (sifted) 1 t. cinnamon (optional) 1 ½ cup Vegetable Oil (I use Wesson brand) 2 cups Sugar 4 egg yolks only Mix and add… 4 T. hot water 2/3 c. chopped pecans 1 ½ cups finely chopped/grated carrots 4 egg whites beaten until stiff, then fold into the batter. 1 t. vanilla flavoring or ½ t. black walnut flavoring Put into 3- 8 inch greased and floured cake pans. Bake at 350 degrees for 25-30 minutes. Let layers cool before frosting. Separate Cooked Filling to go between cooled layers: On the stove top mix 3 egg yolks, 1 cup sugar and 1 melted stick of butter. Slowly add 1 12 oz can of evaporated milk. Cook on low, stirring, until it slightly thickens. Let it cool completely & it will thicken more. Then add 1 t. vanilla, 1 cup flaked coconut, 1 cup chopped pecans. Divide filling in half and spread between the 2 bottom layers. Cream Cheese Frosting: 1 8 oz. Cream Cheese at room temperature 1 stick butter, room temperature Cream together with mixer. Now slowly add 3 ½ cups confectionery (powdered) sugar. 1 t. vanilla Frost the top and sides of the cake with this. Decorate cake as you see fit.
