Chili, Cornbread, Tater Tot Casserole
Featuring Bruce's Smoke Shack This is a most satisfying, warming, delicious one pot meal. It has all that you need in it. Add a side salad if you want to and enjoy. You probably have most of the ingredients on hand to make it. Cook up meat mixture ahead of time, store in the refrigerator or freezer and it will be ready when you are. Karen, Paul, Brandon Contact us at: [email protected] [email protected] [email protected] [email protected] Write us at: Food & Family PO Box 675 McCalla, AL 35111 Amazon store: https://www.amazon.com/shop/karenjonesfoodfamily Rada knives: https://radakitchenstore.com/?rfsn=6926698.6c164b Ingredients 2lbs ground chuck 1/2 tsp cayenne pepper, or to your taste 1 tsp cumin 1 Tbsp black pepper 2 tsp salt 1 Tbsp chili powder 1 onion, diced 1 bell pepper, diced 1 lg or 2 med jalapenos, minced 1 1/2 Tbsp garlic, minced 1 15oz can fire roasted tomatoes 1 15oz can chili beans 2 1/2 cups cornbread mix 1 8oz package of cubed cheddar cheese 1 cup shredded cheddar cheese (we used colby jack) Tater Tots Preheat oven to 350 degrees In large skillet, brown ground chuck. When almost done, add seasonings, onions, bell pepper, and jalapeno. Cook 4-5 minutes until vegetables are tender. Add beans and tomatoes, stir well and let simmer about 4-5 minutes. Nestle cubed cheese down into meat mixture. Pour cornbread mix on top of meat, using back of spoon to push some down into the meat. Top with tater tots. Bake 30 minutes. Add shredded cheese on top and bake another 10 minutes. Serve and enjoy!
