Chocolate Chip Banana Bread Wet Ingredients: 1/2 cup milk 1 tbsp vinegar 3-4 pcs medium bananas (best if overripe) 1/4 to 1/2 cup brown sugar (adjust to desired sweetness) 1/4 cup white sugar 2 eggs 1/2 cup canola or vegetable oil 1-2 tsp vanilla extract Dry Ingredients: 1 & 1/2 cups all purpose flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/2 to 1 tsp cinnamon powder 1 cup chocolate chips (half cup for topping) sliced almonds for toppings 1. In a bowl, mix together the milk and vinegar. This will serve as the buttermilk which will keep our bread moist. 2. Prepare the wet ingredients. In a large mixing bowl, add the bananas and mash until soft. Pour the buttermilk, eggs, canola oil, brown sugar, white sugar and vanilla extract. Whisk until well incorporated. 3. Sift the all purpose flour, baking powder, baking soda, salt and cinnamon powder into the wet ingredient. Gently mix until no visible flour. Do not over mix. 4. Add the chocolate chips and gently fold into the mixture. 5. Line your baking tray with parchment paper. Pour the mixture and tap a few times. 6. Bake in a preheated 180°C oven for 30 to 40 minutes. Baking time may vary depending on your oven. Always keep an eye on it while baking. You can do a toothpick test -- toothpick inserted into the center of the loaf should come out clean. 7.
