coconut ice snow balls

These super easy and very tasty snacks are a great addition for parties, celebrations. Add orange and black food coloring and create Halloween treats or use red and green food coloring and make them for Xmas. Grown ups love them as much as kids do. Ingredients: 1. 2 cups powdered icing sugar 2. 4 cups desiccated coconut, plus about 1/2 cup extra for coating 3. 1 can (395g) sweetened condensed milk 4. Pink, sky blue and leaf green gel food coloring (or use any of your choice); (or use any liquid food coloring) Method: 1. Sift powdered icing sugar into a large bowl. Add coconut and condensed milk, stirring until well combined. 2. Divide mixture among 4 plates (or as many as you like depends how many food coloring you choose); add food coloring to each separately; mix to combined. 3. Roll teaspoons of mixture into balls. 4. Roll in extra coconut to coat. Place on baking tray lined with non-stick baking paper. Chill for 1 hour or until firm. Makes 40.
