Copilot for Microsoft 365 has access to everything that a licensed user has access to. You can limit the knowledge of this access by limiting Teams/sites indexing in SharePoint. Labels can also be used to some extent. If a document is labeled using encryption (Rights management) that does not include the "Extract" permission, then Copilot cannot extract information to be used to answer prompts by the user. The AI Hub can be used to see reporting on how information is being used with Gen AI sites such as Copilot and ChatGPT.
