Coconut Pie:
Preheat oven to 425°
2-regular pie shells
1 1/2 cups granulated sugar
1-6 oz frozen coconut
1 1/2 cups granulated sugar
3/4 cup coconut milk
6 eggs
1/3 stick melted butter or margarine
1 1/2 tsp vanilla extract
1 tsp coconut extract
Mix all ingredients in mixing bowl on medium speed for 1-2 minutes until well incorporated(holding extracts till last) then add vanilla & coconut extracts & mix well.
Pour mixture into pie shells placed on cookie sheet. Place into oven at 425° for 10 min then turn oven down to 350° for 25 minutes or so until golden brown.
Optional Variations: Can add 1 teaspoon each of cinnamon, nutmeg & allspice.
You may also add a dollop of whipped cream to each slice!
Serve when cooled & refrigerate leftovers! Enjoy!!
