Just a simple, rustic mulberry jam. Low sugar, no pectin. The fruit is mild so I add some extra flavors to round it out like my wild vanilla extract (linked above) lemon and orange zest, and a little homemade vinegar made from last years mulberries.
One of the big things to think about with your mulberry jam is if you want it to be spreadable or not. A lot of recipes just boil the fruit with sugar and that tastes fine, but it's not spreadable. If you don't at least buzz the fruit a little in a blender or food processor beforehand it won't be spreadable on toast, which is how I like my preserves.
