Eggless Banana Bread Coffee Cake
Enjoy this delicious Eggless Banana Bread Coffee Cake with your family and friends. It's incredibly moist, flavorful and will easily become your new family favorite. Ingredients: Streusel Topping: 1/2 cup dark brown sugar 1/4 cup granulated sugar 1/2 cup chopped pecans 2 tbsp unsalted butter, melted 1 - 2 tbsp maple syrup or honey (optional) 2 tsp ground cinnamon Cake Batter: 3/4 cup mashed overripe bananas 1/2 cup unsalted butter, melted 3/4 cup granulated sugar 1 cup buttermilk 1 tsp vanilla extract 2 cups all-purpose flour, sifted 1 tsp baking powder 1 tsp baking soda 1/4 tsp salt Notes: Bake in a preheated oven at 345 degrees for 55-60 minutes, or until toothpick or skewer inserted in the center comes out clean. To make buttermilk, measure out 1 cup of evaporated milk. Then replace 2 tbsp milk with 2 tbsp white vinegar. Stir well and set aside for 5 minutes. You can enjoy make the Banana Bread alone, without the Coffee Cake Streusel topping. Baking time and temperature will stay the same.
