Fresh Strawberry Pie
Strawberry Pie ingredients: 1 Pie shell #403305 2-lbs of strawberries #026005 Driscoll's or #153731 Markon ¼ cup lemon juice #028198 2-3 tablespoons corn starch ½ cup water ¾ cup sugar Rich's "On Top" whipped topping #391106 To skip making pie filling: 1 Pie shell #403305 1 lb of strawberries #026005 Driscoll's or #153731 Markon Rich's "On Top" whipped topping #391106 Strawberry glaze #018530 Dock and bake pie shell for 15 minutes at 400. Set aside to cool. Rinse strawberries and remove tops. Slice 1lb of strawberries in half, set aside. Quarter 1lb of strawberries and set aside (these are special berries, these are for the pie filling). “Slurry”: In a bowl mix – water, lemon juice, lemon zest and water and whisk together. Add 1lb of quartered strawberries and sugar to a saucepan and cook on medium for 10 minutes. Stir & muddle often. Add “slurry” and cook additional 5 minutes. Arrange 1lb of halved strawberries in that pie shell, I do mine cut side down, the berries don’t care though. Pour pie filling on top of berries in the pie shell. Refrigerate for an hour. Top it, with whipped topping on top, for us its Rich’s “On Top” Chill and serve.
