What are we harvesting as it approaches mid summer? Also a couple of recipes using summer produce. Recipes below - ------------ Basil Dip 2 Garlic cloves 3 cups Basil ½ cup Cashews or Sunflower seeds 1/8 cup Olive oil 1/4 cup Rice Milk Method: Use a stick mixer Add the ingredients gradually. Add more oil to the pesto if to dry. Store in a glass jars in fridge. Hints - This dip taste great mixed through a fresh green salad or in a salad sandwich too. ---------- Potato Waffles - Makes approx 7 waffles 5 small potatoes 3 Eggs or 3 Dsp Chia Seed (vegan) 1 tsp Veggie Stock Powder 2 tsp Baking Powder 1 tsp grated Garlic 1 tsp Thyme or Oregano 1/2 cup Wholemeal Flour Ghee or Vegetable oil Method: Wash and grate potatoes. Mix all ingredients together. Heat waffle maker. Add ghee to heated waffle maker then add 1 tablespoon potato dough mix. Cook for 7 minutes.
