Honduran Pan de Coco

Honduran Pan de Coco is the 2nd installment of our PAN series. Pan de Coco varies depending on where you are in the world. In the Philippines, they like to stuff their Pan de Coco with a sweet coconut filling. The Honduran version is not sweet and is served alongside soups and stews or as a snack or breakfast. I like mine nice and warm with some butter! I highly recommend using fresh coconut in this recipe since it's hard to duplicate the taste of fresh coconut. Check your local supermarkets to see if they carry them; you'll be glad you did.
