HONEYSUCKLE JELLY
8 cups honeysuckle blossoms (NO LEAVES)
4 cups water
Bring blossoms and water to a boil. Turn off heat and cover with a lid. Allow to steep 4 hours to overnight. Strain juice through cheese cloth and a strainer.
2 cups honeysuckle juice
4 cups sugar
1/4 cup lemon juice
Bring the juice, sugar and lemon juice to a boil that cannot be stirred down. Add one package of liquid pectin and continue to stir while boiling for 2 minutes. Place a couple of spoonfulls of the jelly on a plate and put in the freezer for 1 minute. after the minute check to see if it is jelly like I did in the video. Run your finger thru the middle and make sure it doesnt run back together.
