How I hone my chisels using a Shapton stone.
No need to redefine the bevel, simply maintaining the edge for sharpness.
I use the Veritas mk2 honing guide and set the angle to 25 degrees, flatten the Shapton stone using a diamond plate and hone edge. Once honed, I always polish the flat rear of the chisel. I have used the 5000 stone this time, I do have the 12000 version if needed.
