It's a cold and rainy day today, so I'm going to show you how to can Beef Stew. This is the perfect thing to make and throw in your pantry for those nights when you don't have a lot of time, but want something good! Since Mother and I like a thick beef stew, I did have to thicken this with some corn starch when I heated it back up to eat. Beef Stew: 4-5 Lbs. Stew Meat 12 C. Cubed Peeled Potatoes 8 C. Sliced Peeled Carrots 3 C. Chopped Celery 3 C. Chopped Onion 4 1/2 Tsp. Salt 1 Tsp. Dried Thyme 1/2 Tsp. Freshly ground Black Pepper 10-12 C. Beef Broth/Water Oil For Browning Meat Working in batches, brown meat over medium high heat. Transfer beef with drippings and remaining ingredients to large stainless steel pot. Bring to boil, stirring frequently. Ladle into hot jars leaving 1 inch of headspace. Process pints for 75 minutes and quarts for 90 minutes.
