Who loves corn? In this video I can enough corn for my family for an entire year. I like to use pint sized jars as they are a nice small size (much like a can size you'd buy at the grocery). In this recipe, I'm doing the "raw pack" method. That means I'm packing my jars with raw corn. Why cook it then can it because it will cook when canning. Rule of thumb #1 plan 1 pint jar for every two ears of corn. Rule of thumb #2 If your jars and contents are HOT, your canner should be HOT. If your jars and contents are COLD, your canner should be COLD. You want to prevent sudden temperature changes throughout canning. This will help your jars to seal better and without siphoning (loosing liquid from your jars). This process is EASY, it's just time consuming doing it all by yourself.
