I stirred to about 19 degrees Celsius, but it wasn't at trace. The final texture is slightly grainy. To make texture extra smooth, stir to trace, which would be achieved by stirring to a lower temperature. This would ensure the butters and oils become homogenous and prevent graininess. Follow this basic formula with oils, butters and extracts you choose. Lecithin is tricky to work with so use a very basic formula and ingredients when you first try this type of emulsion.
