Mascarpone Cheese, Cream Cheese and Ladyfinger Cookies dipped in Lemon Syrup. This cool and refreshing sweet/tart Lemon Tiramisu will sure to be one of your go-to summer desserts. Ingredients: 1 (8 oz) package Cream Cheese, room temp 1 (8 oz) container Mascarpone Cheese,room temp 1 cup whole Milk ½ -1½ teaspoons lemon extract (Use more or less depending on your lemon taste desired). 1 (3.4 oz) package Instant Lemon Pudding ⅔ cup - 1 cup Lemon Juice 4-5 large Lemons ¼ cup granulated sugar 20-24 Ladyfinger cookies (1 package) 2 tablespoons Lemon Zest Instructions: This recipe is best suited for an 8x8 pan (double Ingredients for a 9x12 or 9x13 pan). Juice the 4 large lemons. In a medium size bowl add the Lemon Juice and the granulated sugar and microwave on high for 20-30 seconds till dissolved (or do on the stove top) set aside and allow to cool. In a large mixing bowl add the Cream Cheese, Mascarpone Cheese and pudding mix, beat until well blended (2-3 minutes). Slowly add the milk until light and fluffy (2-3 minutes) set aside. Dip each Ladyfinger individually into the lemon syrup (both Sides) and place in a single layer on the bottom of the pan. After the first layer is done, spread half the Cheese/Pudding filling evenly over the top and repeat by dipping the next batch of Ladyfingers in the lemon syrup and using the rest of the Cheese Pudding filling evenly over the top. Sprinkle the Lemon Zest evenly over the top, cover and refrigerate for a minimum of 2 hours (2+ or overnight is good, the longer it is refrigerated the softer the cookies will become). Serve cold with whipped cream (Cool Whip) if desired. Serves 6 - 8
