I love parrying in games like Sekiro, Elden Ring or Metal Gear Rising Revengeance but stuff like Expedition 33 or Deadlock keep proving to me that you can shove that damn mechanic into everything and I will still enjoy it. Even games like Ultrakill or Hollow Knight sneak those mechanics in, even if they are more subtle. Im sure there are many more great examples that i havent mentioned, so feel free to share in the comments.
