Tips, Don't make your buttercream too thick or with will drag on the cake. Knead your fondant really well before you roll it out - this is prevent 'elephant skin' marks on your cake edges and give you a smoother finish. Don't use too much icing sugar on dark fondant - but ensure you use enough so that it doesn't stick. To remove icing sugar once you have finished your cake, you can lightly steam it with a steamer (lightly!) or take a damp brush, remove as much excess as you can from it with a paper towel the brush over the icing sugar. This will leave a light shine on the cake that will disappear within a few hours.
