Bruce and I took the Hurricane 23 miles out Southeast of port canaveral Florida. with Red fish, Red snapper, hog fish, grouper all being closed there were only a few species we could target. We decided to hit some lane snapper spots in the hopes of catching 10 to bring home for dinner. I personally do not find Lane snapper being very good as far as filets , or fish and chips style. I do however find them to be perfect for ceviche. although Ceviche techinally isn't cooked fish I wouldn't call it raw either, it is more like being pickled, just not "pickeled" The citric acid has a reaction with the fish which changes it's color and texture. I add black pepper and creole seasoning to mine but you can add whatever seasoning that you like as well as fruits and veggies.
