Lau Lau
I don't know the exact history of Lau Lau, but I'm sure the ancient Hawaiians did not have access to Salmon. It was very popular at Dad's store and would sell out in hours. He made lots of special orders for people coming from Hilo, Kona, and the outer Islands. The harvesting/washing of the Ti leaves and Taro leaves took most of the time. Otherwise, it was easy and quick to make. Ingredients for 1 Lau Lau 1/4 to 1/3 lbs Pork Shoulder or Butt 1/4 lbs Pork Fat 1/8 lbs Salted Salmon or Black Cod 2 to 3 Taro Leaves - More if on the small(ish) size 1 Ti Leaf Small pinch of Hawaiian Salt or Coarse Ground Sea Salt Combine Prok Shoulder or Butt, Pork Fat, Salted Salmon or Cod, and small pinch Hawaiian Salt on the Taro Leaves. Wrap as tightly as possible, then wrap in the Ti Leaf. Tie with string, do not use rubber bands. Cook in Instant Pot for desired time (75 minutes for me)
