The rules have changed. No. More evolved. The web should be universal and Bootstrap 5 is working at that. They started implementing start and end instead of left and right to account for readability in Arabic.
In Arabic, sentences and structure is setup to read right to left. If you're a web designer or web developer, the box model per se has literally done a 180. It would be cumbersome to flip the sides via media queries, so Bootstrap came up with a solution— start and end, to fix the problem.
Bootstrap says that is experimental, but I'm willing to bet that this will be further implemented in future releases. Yes, the CSS under the hood is still left and right, but the way bootstrap implements it is start and end respectively within the Bootstrap 5.0 framework.
