Leftover Pork Roast / Pulled Pork Cornbread Casserole

I was surprised on how good it was. I may use this again to use up cooked chicken as well. Recipe found here: https://www.pinterest.ca/pin/272819689920962552/ 1 box Jiffy corn bread mix 1 can 14oz creamed corn 2 cups shredded cheese (divided into 2- one cup portions) 2 eggs 1/2 cup milk 1 lb cooked pork 1 1/2 cups barbecue sauce Combine corn bread mix, creamed corn, eggs, milk and 1 cup cheese and pour it into a greased 9x13" baking dish. Bake at 400 F for 20 minutes. Stir together the pulled pork or cut up pork road and the bbq sauce, set aside. Remove the dish from oven and spoon on the pork and bbq sauce mixture on top of the partially baked cornbread. Sprinkle with remaining 1 cup cheese. Bake for an additional 20 minutes.
