Leftover Turkey Soup

#leftoverturkey #turkeysoup #leftovers Leftover Turkey Soup 2 stalks of celery 2 medium carrots 1 medium onion 2 cloves of garlic minced 1 TBSP of chicken bouillon 2 cups of sliced mushrooms * optional ½ cup of rice 2-3 cups of turkey, white of dark meat either is fine ½ tsp salt ½ tsp pepper ½ tsp thyme 6-7 cups of chicken stock Juice of ½ lemon In a large pot add 2 tablespoons of oil and four tablespoons of butter. Sauté the carrots, onions, and celery for five to 7 minutes. Add the mushrooms and garlic. Season with salt pepper and thyme. Let cook 3 to 4 minutes. Add six or seven cups of chicken stock. Bring to a boil and then add the Turkey and rice. Stir frequently. Once it comes to a boil turn the stove to medium, put a lid on, and allowed to cook until the rice is thoroughly cooked for about 20 minutes.
