800 g bread flour (5-3/4 cups)
100 g whole wheat flour (3/4 cups)
100 g semolina flour (3/4 cups)
(OR USE 1000 g of bread flour)
600 g water (2-3/4 cups)
4 tsps sea salt
3 tsps instant yeast
1 Tbsp olive oil
Coarse salt for topping
3 Tbsps baking soda
NOTE: If you want, cut the recipe in half to make fewer rolls.
