a dessert bean pie from the 1973 cookbook "Friendly Fixins' from Friendship"
ingredients:
1 1/2 C sugar
1 stick of butter
2 eggs
1 tsp. vanilla
1 C coconut
1 C pinto beans
Mix sugar, butter, eggs and vanilla well.
Add coconut and mash pinto beans, put in unbaked pie shell.
Bake 325 for 40 minutes
