I am so proud that i finally made a Lobster Bisque - not an easy dish to make but it was delish ! Bisque (French)is a smooth, creamy, highly seasoned sophisticated soup of French origin, classically based on a strained broth of crustaceans.It can be made from lobster, crab, or crawfish. I got 2 fresh lobsters to make this seafood soup today . The shellfish is first gently sautéed in their shells, then simmered with chicken stock and aromatic ingredients before the purée is made. This is then strained through a sieve to extract the “coulis” which is thickened with cream to achieve consistency. Orange vegetables, such as pumpkin ,carrots, are often used in bisques like I did !
