Luck Lantern Soup
1/4 Cup Chopped Cabbage 1/4 Cup Chopped Leek (not the dark green part) 1 Tbsp. Sesame Oil 1 tsp. Minced Garlic 1 tsp. Minced Ginger 1 Medium Onion, chopped 1/4 tsp. Red Pepper Flakes 1 Tbsp. Soy Sauce 3 Cups Vegetable Broth 3 Cups + 1/2 Cup Water 1/2 Cup Sliced Carrot, cut at an angle, about 1/16" thick 1/2 tsp. Salt 1 1/2 Tbsp. Lemon Juice 2 chicken breast chopped 6 oz. Lo Mein Noodles or spaghetti noodles 1 Green Onion, chopped (for garnish. You could alternately use some flat leaf parsley) Important Items: Mesh Strainer Small Star Cutter (or other shape to create garnish) Directions: 1. In the large pot, on medium heat, pour the sesame oil & sauté the garlic, ginger, & onions for about 2 minutes. Add in the red pepper flakes & soy sauce & stir. Next, pour in the vegetable broth & 3 cups of water & bring to a boil. Add the carrots & simmer for about 5 minutes. Next, add in the chickens, the cabbage, salt, carrot, onion, & leeks. Let simmer till your vegetables and chicken are cooked. Remove from heat & stir in the lemon juice. 4. In another large pot, bring 4 cups of lightly salted water to a boil & add in the lo mein noodles. Cook for about 8-9 minutes or until soft. Drain & toss under cold water. Place a medium mound of noodles in the center of a large soup bowl & ladle on soup & sprinkle on some chopped green onions. Serve warm and enjoy!
