Making Tomato Paste | Would I Do It Again?

I use a lot of tomato paste during canning season. I buy small organic 6oz cans, and add it to my canning recipes to help thicken the end product. But what if I could just make my own using excess tomatoes? That's what we're going to try to do in this video. We'll start with 30-40 pounds of tomatoes, and remove all the skins and seeds and cook that down in our Nesco roasting pan for a good day or so first, to remove a lot of the moisture. Then we'll transfer to our freeze dryer, to remove all the moisture, and toss into a blender to turn it into a powder. And then figure out how much actual powder, will be required to make a 6oz portion of tomato paste - then I can just that amount of powder into my canning recipes.
