2 Cups Vegetable Stock
2 Cups Diced Mango
Juice of 1 Lime
2 Tsp Minced Ginger Root
1Tsp Minced Chili Pepper (optional)
1/2 Tsp Garam Masala (or Curry Powder) (or 1/2 Tsp Cumin and 1/2 Tsp Chili Powder)
Salt toTtaste
Sugar to taste (may not be needed)
1/2 cup of Corn (Optional)
Bring stock to simmer and add all ingredients. Simmer until Mango is very soft. Blend, add corn if desired, and serve with a little yogurt.
