Mango Sticky Rice
Easy Mango Sticky Rice Note that this is not the traditional way of making mango sticky rice - just a quick homemade version but still delicious! 😉 1 cup glutinuous rice (malagkit rice) 1 cup water 2 cups coconut milk 1/3 to 1/2 cup condensed milk (adjust according to taste) 1/2 tsp salt cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) ripe mango, sliced roasted sesame seeds 1. Wash the glutinous rice several of times until the water runs clear. 2. Add 1 cup of water and cook using a rice cooker. 3. In a saucepan, prepare the coconut cream sauce by combining the coconut milk, condensed milk and salt. Bring to a gentle simmer while stirring. 4. Pour half of the coconut cream sauce into the rice and mix. Cover with the lid and let the rice absorb the flavors. 5. To thicken the remaining sauce, continue simmering over medium heat and add cornstarch slurry whisk until the sauce thickens and set aside. 6. Peel and slice a ripe mango. 7. To serve, place the sticky rice on a plate with the sliced ripe mango. Pour the coconut cream sauce over the rice and top with roasted sesame seeds. #MangoStickyRice #EasyMangoRice #HungryMomCooking
