Apples are in season and yes, you can make apple butter from crab apples and it's delicious. While most recipes rely on heaps of brown or white sugar, this recipe, inspired by Sam Thayer's locally famous maple-apple spread, is a 100% wild product made with apples, maple syrup, and a pinch of cinnamon.
I recommend starting with a blend of 1/3 tart crabapples to 2/3 sweet or mild apples.
