Maple Shortbread

I thought it would be fun to make every recipe in Emelia Jackson’s “Some of my Best Friends are Cookies”. Welcome to my kitchen! You can definitely smell and taste the maple in these delicious sandwich biscuits - I made them on a Thursday, with plans to use them as a desert for Sunday lunch, but I wouldn't because they were all gone! These are a family favourite (my son prefers them without icing) and I'll make these again. I did have a couple of biscuits that puffed up in the oven a little, but I suspect that was because it was super cold here on the day I made these, and I probably had tiny bits of butter that didn't combine.
