Molten Lava Cake
Chocolate Lava Cake 1 cup of Semi-Sweet Chocolate Chips 5 tablespoons of Unsalted Butter ½ tablespoon of Instant Coffee (or Black Cocoa) 1 teaspoon of Vanilla Extract 2 Eggs 2 Egg Yolks ¼ cup of All Purpose Flour Preheat oven to 425 In a large measuring cup or bowl, microwave the chocolate chips and butter in 30 second intervals. When the chocolate mixture is smooth and slightly cooled, add in the espresso powder, vanilla, eggs, egg yoks, and flour. Stir until smooth and well combined. At this point, the mix can be refrigerated until ready to bake. Grease 3-4 medium-sized ramekins with nonstick spray and fill with batter ¾ full. Bake for 11 minutes or until the tops are set but still concave; do not overbake. Cool slightly then transfer lava cakes to a plate. Serve warm with ice cream and powdered sugar.
