Nama Chocolate Dacquoise Recipe Ingredients: Egg whites 70g Sugar 25g Almond flour 45g Powdered sugar 25g Cake flour 5g Baking:160℃/320°F 20min Nama chocolate inside Chocolate 60g Whipping cream 50g Corn syrup 5g Butter 10g Method: 1. First, make the dacquoise shells by beating the egg whites and sugar until they form little curved hooks. 2. Add the sifted almond flour, icing sugar and plain flour to the egg whites from step 1, mix until there are no more dry ingredients and place in a piping bag. 3. Press out onto a baking sheet, sprinkle with powdered sugar, bake and allow to cool completely before removing from the oven. 4. To make the chocolate ganache, bring the light cream and corn syrup to a light boil, pour into the chocolate and leave to stand for a minute, stirring slowly until smooth. 5. The chocolate can be chosen according to your taste, if you use a sweeter milk chocolate it is not recommended to add more corn syrup. 6. When the chocolate has cooled to about 30°C/86°F, add the unsalted butter and stir well. 7. Squeeze the chocolate ganache into the dacquoise, done! #chocolate #dacquoise #ChocolateDacquoise
