Ingredients for a 22–24 cm (9–10 inch) springform pan
Crust:
200 g speculoos or butter cookies
100 g melted butter
Filling:
400 g cream cheese (room temperature)
250 ml cold heavy cream
200 g pumpkin puree (cooked, pureed, and cooled, or store-bought in a jar)
120 g powdered sugar
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1 tsp vanilla extract
