Simple Banana Bread
Ingredients:
3 ripe bananas (the spottier, the better)
1/3 cup melted butter
3/4 cup sugar (you can cut to 1/2 cup if you like it less sweet)
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
Instructions:
Preheat oven to 350°F (175°C).
In a big bowl, mash the bananas with a fork until smooth. Stir in the melted butter.
Mix in sugar, beaten egg, and vanilla.
Sprinkle baking soda and salt over the mixture and stir.
Add flour and mix just until combined (don’t over-mix or it’ll be dense).
Pour into a buttered loaf pan.
Bake for 50–60 minutes. Stick a toothpick in the middle—if it comes out clean, it’s done.
Cool, slice, devour.
