For the jelly
60g gelatin
300 g water
700g water
180g sugar
85g lemon juice
Orange peels
-soak the gelatine into 300g of water let it hydrate for a few minutes
-in a pot over low heat, mix 700g of water and sugar add Orange peels, lemon juice and dissolve sugar. Simmer and let cool down
- microwave or doble boil the gelatine until liquid and gently add it to the sugar syrup while whisking
