One Pot Enchilada Pie

This simple recipe uses ingredients from our food storage and is baked in a cast iron pot. We adjusted the recipe to fit the ingredients we had on hand. It turned out beautiful and delicious and made enough for multiple meals for us. Products Can opener: https://amzn.to/4eJ0kwj Silicone Measuring Cup Set of 3 https://amzn.to/3RHPeOF Recipe: One Pot Enchilada Pie 2 10-oz. cans mild red enchilada sauce (2 1/4 cups) 4 8-inch flour tortillas 1 cup refried beans 3 cups shredded rotisserie chicken or 1 lb cooked hamburger 1 medium white onion, chopped 6 oz. Monterey Jack cheese, coarsely shredded (about 1 3/4 cups), divided 1/3 c. cilantro leaves Heat oven to 375°F. Spread 1/4 cup enchilada sauce on bottom of 8-inch round cake pan or a 10-inch cast iron skillet. Spread each tortilla with an equal amount of the beans. Place one tortilla in the skillet, bean side up. Top with 1/4th of the meat, 1/4th of the onion, and 1/4th of the cheese. Pour 1/4th of the enchilada sauce on top of the cheese. Repeat layers until ingredients are all used. Bake for 20-25 minutes until the pie is bubbly and the cheese is melted. Remove from oven and sprinkle cilantro leaves on top and serve.
