Opera Torte

Aprende la elaborar la clásica Tarta Ópera o Opera Torte. La Tarta ópera es una elaboración clásica de la repostería francesa con un origen un tanto incierto. Hay dos historias que cuentan cómo podría haber tenido lugar este pastel. La primera de ellas, se remonta a una Exposición Culinaria de París en el año 1903. Louis Clichy, de quien toma nombre la tarta, presentó esta elaboración a los asistentes y les enamoró. La segunda nos cuenta que en el año 1955, Cyriaque Gavillon pastelero de Dalloyau fundada en 1682, creó un tarta que consta de tres capas de bizcocho de Joconde, empapado en un almíbar de café y rellena de una crema de mantequilla de café y ganache de chocolate. Sin embargo, fue su esposa Andrée Gavillon quien bautizó con el nombre de “Ópera” en homenaje a unos bailarines de la Ópera Garnier que acudieron a su tienda. A día de hoy, sigue siendo el pastel más vendido en Dalloyau. Learn how to make the classic Opera Cake or Opera Torte.
