Guittard White Chocolate wafers or chips 1 drop peppermint extract or oil (optional) 1 candy cane, crushed Directions Use the best chocolate you can afford. Also make sure that Cocoa Butter is the second ingredient in any white chocolate you buy. There are lots of white chocolate type products marketed that aren't chocolate at all. Looking for Cocoa Butter in the ingredient list will lead you to good quality products. Place cookie cutters on parchment paper on a cookie sheet. Put 1 cup of Dark Chocolate wafers or chips in a glass microwave safe bowl. Make sure the bowl is completely dry. Microwave for 30 seconds at 50% power. Remove and stir well for a few seconds. Microwave for another 30 seconds at 50% power and stir well. Continue this process until 2/3 of the chocolate is melted. Then continue to stir until chocolate is completely melted. Spoon about 1/4 inch of dark chocolate in each cookie cutter. Set aside to cool and firm up. When the dark chocolate is cooled and completely solid, put 1 cup of White Chocolate wafers or chips in a glass microwave safe bowl. Make sure the bowl is completely dry. Microwave for 20 seconds at 50% power. Remove and stir well for a few seconds. Microwave for another 20 seconds at 50% power and stir well. Continue this process until 2/3 of the chocolate is melted. Then continue to stir until chocolate is completely melted. Spoon about 1/4 inch of white chocolate on top of the dark chocolate in the cookie cutters. Place an unwrapped peppermint candy cane into a ziploc bag and crush it into small pieces. Sprinkle the crushed candy on top of the white chocolate.
